Ingredients

Bacon and mushroom pasta

  • 400 g penne
  • 4 bacon rashers, rind removed, cut into thin strips
  • 4 green onions (shallots), finely chopped
  • 250 g button mushrooms, sliced
  • 1 cup (240g) light sour cream
  • 100 g baby spinach
  • 1/4 cup (20g) grated parmesan

Steps

Bacon and mushroom pasta

  1. Cook penne in a large saucepan of boiling, salted water according to packet directions. Drain and return to pan. Cover to keep warm.
  2. Cook bacon in a medium saucepan on medium-high heat for 3 minutes, stirring, until brown and crisp. Add green onion and mushroom and cook for another 3 minutes, stirring, until soft. Add sour cream and spinach and season to taste. Cook for 1-2 minutes, until heated through.
  3. Add sauce to warm pasta and toss together on medium heat until combined. Serve sprinkled with parmesan.
