Angel hair pasta with prawns

  • 50 g butter
  • 1 tsp chilli oil
  • 3 garlic cloves, thinly sliced
  • 300 g green prawns, peeled, deveined, halved lengthways
  • 250 g punnet cherry tomatoes
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 500 g angel hair pasta
  • 100 g snow peas, blanched, sliced
  • 50 g feta, crumbled
  • basil leaves, to serve

Steps

Angel hair pasta with prawns

  1. Heat butter and oil together in a large frying pan on medium until foaming.
  2. Saute garlic 30 seconds, until fragrant. Add prawns and cook 2-3 minutes, stirring occasionally, until almost cooked through.
  3. Add tomatos, juice and zest and cook 2-3 minutes, until tomatoes soften slightly.
  4. Meanwhile, cook pasta in a large saucepan of boiling salted water following packet instructions. Drain well and reserve 2 tablespoons cooking liquid.
  5. Add pasta to frying pan with snow peas and reserved water. Season to taste and toss well. Serve topped with crumbled feta and basil leaves.
